procedure.Chocolate Pecan Tart (A Fam Favorite...Thanksgiving for my family and another one for Dan's family, which I made last week while I was watching Spider Man (which was fabulous, by the way).I've changed up the recipe a bunch over the past few years, and a lot of people have asked me for it.Sift together the flour and salt.Then work the water into the mixture 1 tablespoon at a time (might as well use your hands for this too) until the mixture just barely holds together.You can start to make the filling while the dough is chilling.Quick hint: I roll the dough in between two pieces of plastic wrap.This makes sure that it doesn't stick to the rolling pin and is easy to lift off of the counter.Use the tips of your fingers to press the dough along the sides and down into the pan.Remove any excess by pressing the dough along the scalloped edge of the pan.If there are any holes or tears in the dough, patch them up.Cover the lined tart pan and chill for 30 minutes.If you have mini tart pans, line them with the extra dough and chill.Melt chocolate and butter together in a double boiler and set aside.Remove the glass bowl from the steaming pot when the ingredients are almost completely melted, and continue stirring until fully melted.If you need more heat to fully melt the chocolate, just put the bowl back over the steaming water for another minute.Using a medium saucepan, stir maple syrup, corn syrup, and sugar over medium heat for 1 minute.Then bring it all to a boil, stirring occasionally.Remove from heat and set aside.Add chocolate and butter mixture to eggs and stir vigorously until thoroughly blended.Remove lined tart pan from refrigerator and place on a baking sheet (for easy transport to and from oven).Carefully pour the pecan mixture into the shell.Make sure pecan pieces are distributed throughout.Garnish with pecan halves.Carefully remove tart from tart pan.Serve at room temperature.You can view larger versions of all the pix here.I've ever tasted was made with bittersweet chocolate.As I was crunching away, I realized what made them so delicious.It was the contrast in flavor intensities.Rather than overpowering the palette with bitterness from all angles, the milk chocolate and coffee bean pairing offset each other.The sweetness of chocolate softened the bite of the bean without overpowering the coffee flavor.The power of pairing opposites together can apply to other food and chocolate pairings as well (though wines operate a little differently and would not necessarily abide by this rule).It goes against the traditional espresso + dark chocolate pairing that you'll find in so many European cafes, but my tastebuds don't lie (at least not to me).I'm really into food pairing these days.Here's a picture of ideal set, I started thinking that I should put together a music and chocolate pairing and post it here.But if I try to match up chocolate with music by myself, the results will be dominated by my personal music preferences.On one hand, it seems easier to start with a bunch of cool songs and then match up chocolates that will go with them, but doing that would downplay the importance of the chocolate in the whole deal.Create some sort of chart or card where tasters can first indicate if there are particular genres of music that would pair well with the taste experience of each chocolate, and then have the option to specify particular artists, or even a particular song that might make for a good pairing.Speaking of chocomusic, their website is pretty jammin'.Jamiroquai has never sounded so delicious.The song, called La Femme Chocolat, is about a girl who really loves to eat chocolate (and worries that maybe it's too much).Street Attack in Boston.And we had around 20 people or so, so I guess I was right.There were 6 different kinds of chocolate and 7 different kinds of beer.The sweetness of the beer connects with the warmth and caramel flavor of the chocolate.It's almost like they were ignoring each other.Separately though, they're each quite delicious.The two mellowed each other out.The pairing was smooth and pleasing.ABV), the Rochefort 6's flavor profile did not mesh with the dark chocolate we tried it with.It'd be like a rootbeer float.See an indepth description of what this pairing is like in this previous post.Overall, the Ommegang and Dubbel pairings are Dana, who spent much of her life having her babies taken from her for research, is today the matriarch of a chimpanzee group at Save the Chimps.During her many years in research, Dana was primarily used for breeding.Most chimpanzee mothers, whether captive or in the wild, love and protect their babies and would never willingly give them up.But when continually robbed of their children in the lab, some such abused mothers are said to eventually recognize their powerlessness and begin not to struggle.Despite the hardships of her past, Dana has embraced her new life in sanctuary.Coulston Foundation to the new facilities at Save the Chimps in Florida.Those who meet Dana speak of her wisdom. |
